19th June 2009. Wild Boar and Mousedeer Meat From Empaling

Today my brother Storey came down to Kuching from Kampong Empaling. Along with him he brought wild boar and mousedeer meat. The wild boar he bought it from our cousin Ami who shot it last night. Whereas the mousedeer he shot it himself also last night.


This is how the wild boar meat look like.



Mousedeer Meat...

For lunch, I fried the mousedeer, ginger fried style whereas for the wild boar, I cooked it soup style. A very simple soup just add it with salt, ginger, lemongrass/serai and garlic.

Wild Boar Soup....

20th June 2009 - Pansoh Wild Boar and Mousedeer

Another way to cook the wild animal meat such as the wild boar and mousedeer is by pansoh or by cooking them using the bamboo. This bamboo can be bought from the market especially the Sunday Market

Ingredients:

  • 500mg of Wildboar or mousedeer meat cut into pieces
  • 1 local brinjal, skinned and cut into wedges
  • 1-2 lemongrass - bruised
  • 20g bungkang leaves
  • 20g ginger - sliced
  • 10g red chilies, seeded and sliced(Exceptional , for Iban we seldomly add our pansoh with chillies as we dont eat spicy food)
  • 1 tsp salt
Cooking Utensils

  • Bamboo log
  • Tapioca leaves or banana leaf

Directions:



  1. Combine all the ingredients, except the last two, in a mixing bowl and set aside for 10 minutes.
  2. Stuff into the bamboo log and seal with the tapioca leaves or banana leaves
  3. Cook the wildboar or mousedeer by standing the bamboo log sealed side up, over burning wood or charcoal, for 30 minutes.
  4. To serve, remove the tapioca/banana leaf and drain the tasty juice into a bowl. Split the bamboo to extract the chicken and arrange on a serving dish with the juice.

Pansoh is easy to cook and the food cooked by pansoh also healthy as it was done without oil and the Aji No Moto.
